Special soup and soup stock
The soup stock we make every morning is made by soaking Rishiri kelp in water and letting it sit overnight.The next morning, we add 2-year-old bonito flakes from Kagoshima Prefecture and bring it to a boil.This creates a light and elegant soup stock that goes well with soba soup.Ichiban soup is a cold soba soup so that you can enjoy the aroma.The second dashi soup has a rich flavor with the addition of mackerel flakes.For warm soba noodles.
